Ingredients :-
700g Highland beef mince
2 1/2 cup fresh breadcrumbs
1 egg
1 onion, finely chopped
1 cloves garlic, finely chopped
2 tablespoons tomato puree
1 tablespoon worcestershire sauce
4 rashers streaky bacon, rind removed & chopped
1/2 cup flat leaf parsley
50g Mature Cheddar or other tasty cheese
salt & black pepper
olive oil
Instructions :-
1. Preheat oven to 180ºC gas mark 4
2. In a frying pan, heat the oil and fry the onion, garlic and bacon
for 5 minutes or until soft. Then set aside to cool.
3. In a large bowl add the mince, tomato puree, worcestershire sauce,
parsley, egg and 2 cups of the breadcrumbs. Mix until well combined
then mix in the bacon, onion and garlic, season to taste.
Place the mixture in to deep baking tin, pressing in firmly. Combine
the remaining breadcrumbs and cheese and press onto the top of the
meatloaf.
4 Bake in oven for 45 minutes or until firm to touch. Remove from
oven, and allow to stand for a few minutes to cool slightly and remove
from the baking tin, before slicing the meatloaf and serving with
mashed potato and vegetables. |
